Brown Bag Tuesday: Greens and a Burger

Eating on a budget is anything but boring. Brown Bag Tuesday is a weekly peek into my lunch bag to see that saving time, money, and energy still means getting to enjoy delicious real food.

Today’s lunch is another “I need to go grocery shopping” creation, but I’m still pretty excited about it. I have a jalapeno pickle burger (though no more portobellos to serve as buns, which is why it’s looking a little naked), thick sweet potato fries, and raw broccoli with lemon-tahini dipping sauce.

Share this effort and treat yourself to a fabulous lunch from home today!

About Humble Foodie

While we both love to eat well, life as AmeriCorps volunteers doesn’t afford us the budget to try every new restaurant and type of cuisine. With many post-graduate expenses and limited financial resources, what’s a foodie to do? The answer is here, at The Humble Foodie. Instead of spending our hard-earned cash paying other people to cook for us, we’re spending as frugally as possible making delicious meals at home.
