Watermelon Summer Salad

Yes, fruit salads are delicious, but what about trying something more unique?  Watermelon is a fruit that is naturally so delicious and refreshing.  But what about adding more ingredients to make it even more tasty, especially as a treat in the summer? You know you are a true blogger when you’d rather try a recipe from a fellow blogger than say, Martha Stewart! After some searching, I found this recipe from The Shiksa in the Kitchen for a watermelon salad. Check out her recipe and beautiful pictures!

In addition to the watermelon, feta, and mint, she also added a tangy dressing! YUM! A perfect treat on a hot summer day.  I recently made this for a picnic, and everyone loved it.  Hurry up and throw it together before the summer is over!

Here is her recipe:

1 7-8 lb. seedless watermelon, chilled
1/2 cup extra virgin olive oil
3 limes, juiced
1 1/2 tsp salt
3/4 tsp black pepper
1 cup fresh chopped mint leaves
1 1/2 cups crumbled feta cheese (goat or sheep milk feta is best)


Cut rind from the watermelon, then chop the fruit into 1 inch chunks. Place chunks in a colander to drain as your chop.

In a small bowl, whisk together olive oil, fresh lime juice, salt, and black pepper to create a dressing.

Place watermelon in a large salad bowl. Pour dressing and chopped mint over the watermelon and toss gently to coat.

Pour the crumbled feta into the salad bowl and stir gently to integrate the cheese into the salad. Serve.

    I was in Greece recently and had this salad a few times with tomato (like big heirloom tomatoes or something similar).
