Wrapping things in bacon is one simple way to enjoy your favorite bites just a little more. Bacon-wrapped sweet potatoes, plantains, and avocados have all found their way onto my plate recently. I had tried other recipes that involved baking avocado and was hesitant to bake these wedges- thinking they’d be bitter or dry. Instead, I got bite-sized appetizers that are crispy on the outside and warm and gooey on the inside. Serve these to friends for an evening on the patio!
Bacon-Wrapped Avocado Wedges – Serves 4

Prep Time: 5 minutes
Cook time: 22 minutes
2 ripe avocados
8 strips bacon
Optional seasonings: chili powder, cracked black pepper, cayenne pepper, lime juice
Preheat oven to 400°F. Line a baking sheet with aluminum foil and place an oven-safe cooling rack on top. Halve both avocados lengthwise and use a spoon to scoop each half from the peel. Slice each half into four wedges (16 total). Cut strips of bacon in half.
Wrap each avocado in a piece of bacon and use metal skewers or soaked wooden skewers or toothpicks to hold in place. Place on rack and sprinkle with desired seasonings, then bake for 12 minutes. Remove from the oven, flip, re-season, and cook for 10 more minutes or until your bacon is crispity crunchy.
