Over the past year, I have enjoyed so much delicious Mexican food, and I’m embarrassed to say my love for guacamole just recently developed.  With the right combination, it is so flavorful and adds the necessary kick to tacos and chips!

I already mentioned pink lemonade as a staple summer treat, and I think guacamole also fits into this category!! Coupled with a margarita and sunshine, it’s heaven!

Ingredients- Serving: 2 cups
Prep time: 20 minutes
Cook time: none

2 avocados
1 lime
1/2 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 medium onion, diced
2 tomatoes
1 tablespoon cilantro
1 clove garlic

Peel avocados and place in large bowl.  Mix in lime juice. Drain once avocados are evenly coated. Keep remaining lime juice. Add in salt and cumin. Mash together. Then, mix in onion, tomato, cilantro, and garlic. Add 1 tablespoon lime juice. Mix, max, and enjoy!
