My favorite snack to splurge on is a pastry and a latte! Especially if I’m in a cozy coffee shop in the winter, or enjoying the sunshine outside, the sweetness of a pastry and the bitterness of the coffee is a yummy combination.
While studying in college, I often enjoyed a scone at the local coffee shop. A scone is one of those sweets that you would rather buy than attempt to make. Although their triangle shape, golden brown color, and “i’m not too sweet but sweet enough” attitude can be intimidating, they are actually rather easy to bake. Also, if you have never tried cinnamon chips before, you are missing out!
Cinnamon Chip Scones
3 1/4 cups flour
1/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cups cold butter
1 cup buttermilk
1 teaspoon vanilla
3/4 cup cinnamon chips
Preheat oven to 425. Combine dry ingredients in a bowl.
Cut in butter. By adding cut pieces of butter to the mix, it crumbles with the dry ingredients. This will not be smoothed, and not all ingredients will be well mixed.
Mix in buttermilk, vanilla, and cinnamon chips. Roll on a floury surface and shape into a circle. Move to baking sheet.
As a garnish, brush on melted butter and add sugar. You may still see chunks of butter in the dough-that is okay.
Bake at 425 for 15 minutes or until golden brown.
