Baked Carrots with Cumin

Sometimes coming up with an easy side dish to add to your quick meal in or to bring to an event isn’t so easy.  Believe it or not, being creative is easier than you think!  Just adding a few spices can really change a simple snack.  I usually snack on carrots during the day or eat them as part of my lunch.  If you think of carrots as a snack, you may be asking yourself, “Can they really be more “exciting?””

Yes! Adding a little zest to any simple veggie can really jazz it up. Sprinkle some cumin, and you have created the perfect snack! If you cook them just right, they also almost taste like sweet potato fries!


1/2 lb carrots, sliced
Olive oil
1 teaspoon cumin
Salt and pepper


Preheat oven to 425.  On a baking sheet, line carrots and cover in oil. Dress with cumin, salt, and pepper. Bake until soft. I used bagged carrots, so they only took 10 minutes to soften. If you are using fresh carrots, they may cook for another 10 minutes.

    My boyfriend and I were looking for an easy veggie side dish last night to go with the quick pesto we whipped up for dinner. He isn’t a big fan of carrots but we both really liked these. Super quick and simple, which is exactly what we wanted. Thank you for posting!
