Chicken Tortilla Soup

One of my goals this winter was to try numerous warm recipes. So far, I have made chili, chowder, and now chicken tortilla soup! Soup is a great meal to warm up with on a cold winter day.  Not to mention, you have leftovers for a few days! 

Last week, I decided to try to make it.  It’s easier than you may think, like most soups.  When you’re done chopping, simply add all of the ingredients!


2 tablespoons vegetable oil
1 small onion, diced
2 tablespoons minced garlic
1 jalapeno, finely diced
6 cups low-sodium chicken broth
1 can diced tomatoes
1 can black beans, rinsed and drained
2 chicken breasts, boneless and skinless
2 limes, juiced
Salt and freshly ground black pepper
1 cup roughly chopped fresh cilantro leaves
Shredded cheese to taste


Cook onions in oil over medium heat in a sauce pan.  When softened, add in garlic and jalapenos cook.

Add in chicken broth, tomatoes and beans. Bring to a boil, then simmer. Add chicken breasts. Chicken will take 20-25 minutes to cook. Cooking the chicken in water makes it soft and tender.  Remove from heat and cut into pieces.  Add lime juice and fresh cilantro to the pot. Then, add back in chicken pieces. Add cheese and tortilla chips to taste.
