Chicken with Spinach and Peach Salsa

In the cold, snowy Chicago winters, sometimes I just have the urge to feel the sun on my face and enjoy some delicious fruit! Considering we are only in February, us Chicagoans have a while until we will feel the sting of summer.Mixing up a fruity salsa, however, does give me a taste of summer! Depending on your favorite ingredients, enjoy this dish as chicken with peach salsa and a side of spinach or as a salad with chicken and peach salsa!


1 chicken breast
A handful of spinach
Juice from 1 lime
2 peaches
1/2 red pepper
2 tablespoons of red onion


Begin by cutting a thawed chicken breast into small pieces.  Cook in a saucepan with a few tablespoons of oil. While the chicken is cooking, rinse off your spinach and let dry.  Squeeze juice from half a lime over chicken while cooking.

To make the salsa, chop peaches, red pepper, and red onion into small pieces.  Mix in juice from half a lime.

When chicken is cooked, remove from heat.  Next, layer spinach, chicken, then peach salsa. Adapted from the recipe Smoked chicken salad with papaya fruit salsa in Quick Cook by Heather Whinney
