Cranberry Pecan Granola Bars

Granola bar= a perfect breakfast or afternoon treat. Not too small. Not too big. Just the right amount. Instead of grabbing a box of them at the grocery store, try making them!  They are easier than you think! This recipe has pecans and cranberries, but feel free to try any combination of nuts and dried fruit!

Cranberry Pecan Granola BarsMakes 20 bars

1 egg
1 egg white
1 cup brown sugar
1 tablespoon oil (either canola or olive)
1/4 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups toasted oats
2/3 cup dried cranberries
1/4 cup pecans, chopped
1 tablespoon flour

Preheat the oven to 350 degrees.  Toast oats on a pan for 15 minutes until lightly browned.  Lower oven to 325 degrees.  Coat an 8 X 11 inch pan with oil and line with foil.

Mix together egg, egg white, brown sugar, oil, salt, and vanilla extract.  Whisk together until well combined.

Add in cranberries, oats, pecans, and flour.  Spread evenly on pan.  Cook for 25-30 minutes, depending on how chewy you would like.  When cooked, let cool and cut in to bars.
