Apple Cinnamon Bars

Yes, Yes… I know I already posted apple cinnamon cupcakes, but this flavor combination is so genius, I couldn’t resist baking with cinnamon and apples again. Afterall, it is fall!  I’ve had cinnamon chips in my cabinet for quite sometime and had the urge to use them! Chocolate…typical, white chocolate….normal, but cinnamon-so unique! Cinnamon always jumps out. These treats were described by my students as “a piece of heaven!” Best served warm.


6 tbsp softened butter

1/2 cup granulated sugar

1/2 cup packed brown sugar

2 eggs

1 teaspoon vanilla

1 3/4 cups flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup chopped, peeled tart apple-Granny Smith is a great choice

1 cup, plus a few tablespoons cinnamon chips


Preheat oven to 350 degrees F.  Use a 13×9-inch pan and spray with cooking spray.

Beat butter, granulated sugar and brown sugar on medium speed for a few minutes. Beat in eggs and vanilla.  Then, mix in in flour, baking soda and salt.  When well blended, stir in apple and cinnamon chips.

Spread batter in pan.  Sprinkle extra cinnamon chips on top.  Bake around 30 minutes or until bars are beginning to brown.  Cool in pan for about an hour.  Cut into bars.  Best eaten warm!
