Zesty Veggie Side

I often have trouble reaching my 3-5 servings of veggies a day, but veggies and I are becoming better friends.  The more recipes I try, the more I am growing to love them! They aren’t as refreshing as fruit, but when combined with the right flavors, they are just as tasty.  This recipe is great as a side dish or it can be a meal by adding a meat.  All you need is your veggies, Italian dressing, and cheese!  This quick recipe can be thrown together in no time!  Grab your favorite veggies, and let’s begin!


1 large red pepper

1 potato, cut into cubes

6 oz baby carrots

1 onion, cut into wedges

1 zucchini

1/3 cup italian dressing

1/3 cup parmesan cheese


Serves 6 hearty sides

Preheat the oven to 450 degrees.  Line a 9 X 13 pan with aluminum foil and spray with cooking spray-this is especially important for the potatoes. Cut veggies and combine in bowl. Toss with italian dressing and parmesan cheese. 

Pour in pan.  Bake for about 30 minutes, depending on potatoes. Stir every 10 minutes.  Serve and enjoy!
